Ingredients:
2/3 cup plant-based milk
2/3 cup water
1/4 cup olive oil
1 tsp salt
2 cups tapioca flour
3/4 cup nutritional yeast
1 egg or egg substitute (Just Egg)
Instructions:
Prepare the Liquid Mixture:
In a medium saucepan, combine the plant-based milk, water, olive oil, and salt.
Stir over medium-high heat until the mixture comes to a boil.
Incorporate the Tapioca Flour:
Remove the saucepan from heat.
Gradually stir in the tapioca flour until well combined. The mixture will be sticky and thick.
Cool the Mixture:
Let the mixture cool for a few minutes until it's warm to the touch but not hot.
Add Nutritional Yeast:
Add 3/4 cup of nutritional yeast to the mixture.
Mix thoroughly using your hands. The dough will start to come together.
Incorporate the Egg:
Add the egg or egg substitute to the dough.
Knead the dough with your hands until it's smooth and your hands are numb from the effort. This helps ensure a uniform texture.
Form the Rolls:
Preheat your oven to 350°F (175°C).
Roll the dough into golf ball-sized pieces.
Place the balls on a baking tray lined with parchment paper or a lightly oiled baking sheet.
Bake:
Bake in the preheated oven for 25 minutes or until the rolls are lightly golden and puffed up.
